The high temperature inside a beehive and the strategic actions of the hive bees ensure that the water evapo- rates relatively quickly, leaving almost ripe honey. This is then stored in the honeycomb cells, where the rest of the moisture evaporates. But the hive bees don't rest – the honey keeps being re- moved from the cell and enriched with further enzymes and other substances every time. As soon as the water content is low enough, the honeycomb is com- pletely filled and sealed with a thin wax lid – and the honey is ready! It is therefore important to look for an MGO (methylglyoxal) or UMF (Unique Manuka Factor) value on the packaging. Genuine Manuka honey has a value of at least 100 MGO or 10 UMF. A higher MGO/UMF value indicates a higher quality, which is also reflected in the price. Manuka honey has a rich, earthy aroma and a slightly bitter note. The nuances vary from mild to intense, depending on the UMF or MGO value. The origin of Manuka honey This exceptional honey comes from the pristine landscapes of New Zealand, where the broom tea-tree, also called the manuka tree, grows in the wild.
